INGREDIENTS
Serves 6
5 – 6 Pieces boneless skinless chicken thighs
8 – 10 cups spring mix salad or use your favorite salad greens
1 nectarine
5 strawberries
1/2 ripe mango
1/2 cucumber
1/4 cup blueberries
I pack Fi Mi Kingston Original Jerk SpiceVinaigrette:
1/2 cup rice wine vinegar
2 Tablespoons olive oil
1 Teaspoon pepper
1 Teaspoon sugar
1/2 Teaspoon garlic salt
1 Tablespoon raspberry jam
In a screw-top jar combine vinaigrette ingredients. Close and shake well.
DIRECTIONS
Marinate the chicken thighs using Fi Mi Kingston Jerk Seasoning for 2 hours or overnight. Grill chicken until fully cooked or juices run clear.
Set on place, just be serving slice chicken into strips or cubed.In a large bowl, place all your spring mix or favorite salad greens. Ensure they are dry first.
Begin assembling your salad with slices of cucumbers, nectarine, cubed mango, sliced strawberries and blueberries.
Put the chicken on last.Put dressing on before serving.
Slightly toss salad. Serve with fresh artisan bread and a local pinot grigio or rosé. Yeah man!!
